Breakfast Lasagna

I admit, the first time I heard someone say the phrase “geek food” I was confused. This made no sense to me… isn’t all food geek food? It’s not as if there are stores or restaurants devoted to food specifically aimed at us… but then it struck me, there are fandom foods like Gah’q and even Fish Fingers and Custard so there must be a food subculture. I myself, fell to a subculture of the foodie world that noone likes to talk about except in the shadows and the fringes- Frankenfood.

By definition, a Frankenfood is an item that crosses the lines of sweet and savory as well as cultural and societal. In short, its food that makes you think, “Noone in their right minds would do this!” and then you taste it, and you let it roll around your taste buds, and you think, “Why did this take so long?” I love the world of Frankenfood, and I hope you’ll join me there. Today I’d like to introduce you to an experiment I completed on New Years Day, Breakfast Lasagna. This is a dish that combining Italian cooking techniques and good ol’ American ingenuity… welcome to my laboratory.

Recipe for Breakfast Lasagna:

Cheese mixture-
1/2 LG container of marscapone cheese
1 LG container of ricotta cheese
2 LG eggs
1 cup good maple syrup
1/2 cup brown sugar
1/2 lbs of cooked and crumbled breakfast/sage sausage

Whip till combined and set aside covered in cool spot.

Pancakes-

Prepare pancakes using your favorite recipe (Bisquick is fine)… depending on the size of your pancakes and your vessel will determine how many you’ll need. I suggest at least enough pancakes to cover the dish twice to three times.

French Toast-

Prepare French Toast using a thicker bread such as Texas Toast… custard mix is as follows Increase as needed:

3 LG eggs beaten
2 tsp vanilla extract
1/2 cup light cream or half and half

Soak and bake or fry enough for at least 1-2 layers

Cook off 2lbs of bacon crisp and cut/crumble… also 1/2lb of sausage (crumbled) combine set off to side drained.

Construction:
1) Butter deep pan well, and begin placing pancakes in bottom with slight overlap of each other AND up sides of pan.
2) Spread cheese mixture in an even layer across cakes.
3) Sprinkle generously with bacon/sausage.
4) Place layer of french toast and press down to compress.
5) Repeat 2 and 3.
6) Place layer of Pancakes and press down to compress.
7) Repeat 2 and 3.

If at this point the pan is full, drizzle melted butter and sprinkle cinnamon sugar atop of it. If not repeat layers until you reach top.

Place the tray in a preheated oven at 350¤ for 30-35 minutes. Remove and place under broiler until sugar caramelizes atop, then remove to the stove top and wait 5 minutes to set, slice and serve.
